Caponata fantasia dell’orto with sweet Sicilian olives

Ingredients :

200 g of Almaverde Bio Fantasia dell’orto
200 g of Almaverde Bio tomato puree
1 shallot
12 Almaverde Bio sweet green olives from Sicily
salt and pepper
20 g apple cider vinegar
8 g brown sugar
extra virgin olive oil
5/6 fresh basil leaves

Preparation :
Chop the shallot and sauté it in a pan for a few minutes with a drizzle of extra virgin olive oil. Add the frozen vegetables, flavor and add the tomato puree and olives; cook for about 30 minutes, adding water if necessary. Deglaze with apple cider vinegar, add brown sugar, adjust salt and pepper, top with chopped basil and a drizzle of extra virgin olive oil, serve.
