Scrambled beans with sea bream

Ingredients :

Ingredients for 4 people:

600g frozen green beans SUCOR
600g fillets of sea bream
4 eggs
1 onion
1 frozen parsley spoonful Sucor
4 extra virgin olive oil spoonful
peel of 1 organic lemon
salt, pepper

Tips and variations :
You can replace the sea bream with sea bass, salmon, salmon trout, cod, turbot, cod or monkfish.
For something extra, add Taggiasca Olives and fresh grated ginger.

Preparation :
In a pan heat 2 spoonful of extra virgin olive oil and cook the sea bream fillets cut into small pieces, when they are well browned on both sides, remove from the pan and keep aside. In the pan put the remaining oil and brown the onion cut into very thin slices, cook for 10 minutes on a very low flame, turning often. Add the frozen green beans, salt and cook it for 10 minutes adding water a little by little, after cooking they should be dry. Meanwhile, in a bowl, beat the eggs adding parsley, salt, pepper and grated lemon rind. Add pieces of sea bream to the green beans and pour the egg cream.
Stir until when the egg has cooked but be careful not to break the fish. Serve immediately hot.
