Peel the onion, wash the friggitelli pepper, cut them in half, remove the seeds and slice the vegetables into thin slices. Heat a pan with a spoonful of extra virgin olive oil and sauté the vegetables for few minutes, season it with salt and chilli pepper. Keep it aside and in the same pan heat the grilled peppers on both sides. Place a thin slice of cheese on each half tortillas, cover it with grilled peppers and vegetables, complete with the remaining cheese and fold in the tortillas in half, let them heat in the pan on both sides for a few minutes. Serve immediately.
